Citrus-Ginger Base
Make the ginger syrup (if using fresh ginger)
Peel and finely grate about 1/2 cup fresh ginger. Combine grated ginger, 1/4 cup water and 1/4 cup demerara sugar in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Simmer 2 minutes to extract ginger flavor, then remove from heat and let steep 15 minutes. Strain through a fine mesh into a bowl, pressing solids to extract all liquid. This yields roughly 1/4 cup strong ginger syrup. If using store-bought strong ginger syrup or pure ginger juice, skip this step and measure 1/4 cup.
Combine 3/4 cup fresh lemon juice and 1/4 cup prepared ginger syrup (or ginger juice) in a mixing pitcher. Stir to combine.
Spirit & Floral Components
Add 1.5 cups vodka or gin to the lemon-ginger mixture. Stir in 2 teaspoons rosewater and 2 tablespoons orange liqueur (if using) until homogenous. Taste and adjust: if you want more floral note, add another 1/2 teaspoon rosewater, but do so sparingly to avoid perfume-like bitterness.
Sparkling & Garnish
Chill the combined mixture in the refrigerator for at least 20 minutes to meld flavors, or chill longer for better integration.
To serve as a short cocktail: Fill four coupe or rocks glasses with ice (about 1–2 cubes each). Pour 4 ounces (1/2 cup) of the spirit-citrus-ginger base into each glass (measure for consistency). Top each with 2 tablespoons (about 1.5 ounces) chilled sparkling water or club soda to give a light effervescence.
For a long/large format (pitcher) serving: Fill glasses with ice and pour 1/4 cup (2 ounces) base per serving and top with 1/4 cup sparkling water for a lighter, longer drink.
Finish each glass by gently spooning 1/2 teaspoon rose syrup over the top so it creates a pretty pink float. Garnish with a thin lemon wheel or twist laid on the rim and two candied or paper-thin fresh ginger slices skewered on a cocktail pick.
Serve immediately. Encourage guests to stir once or twice so the rose syrup blends into the drink as they sip, creating a gradient of flavor from floral to bright lemon and warming ginger.
