Prepare patties
Divide the 1 lb ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4-inch thick and slightly wider than the buns. Season both sides with 1/2 tsp salt, 1/4 tsp black pepper and 1/4 tsp garlic powder per patty (total quantities listed in ingredients). Do not overwork the meat.
Grill or char habaneros
Heat a grill or cast-iron skillet over medium-high heat. Toss the habanero peppers with 1 tbs olive oil to coat. Place whole habaneros directly on the grill or in the hot skillet and char, turning occasionally, until the skin is blistered and softened, about 6–8 minutes. Remove and set aside on a plate to cool slightly. Once cool enough to handle, slice each habanero lengthwise, remove stems and seeds if you want milder heat (use gloves or wash hands thoroughly). Thinly slice for topping.
Cook bacon
In a skillet over medium heat, cook the 2 bacon strips until crisp, about 6–8 minutes, turning as needed. Transfer to paper towels to drain, then break into halves or leave whole as preferred.
Cook patties
Increase heat to medium-high. Place patties on the preheated grill or skillet. Cook 3–4 minutes per side for medium (adjust time for desired doneness). When patties are about 1 minute from finishing, place a slice of habanero jack cheese on each patty and close grill lid or cover skillet to melt cheese, about 1 minute.

Make the sauce
Halve and pit the avocado and scoop the flesh into a blender or food processor. Add 1/2 cup packed cilantro leaves, 1/4 cup Greek yogurt, 1 tbsp lime juice, 1/4 jalapeño (seeded if desired), 1/2 garlic clove, 1 tsp olive oil, 1/2 tsp salt and 1/4 tsp black pepper. Pulse until mostly smooth. Add up to 2 tbsp water, one tablespoon at a time, to reach a pourable/creamy consistency. Taste and adjust salt, lime or jalapeño heat as needed.
Finish & serve
Transfer sauce to a small bowl and chill briefly if desired. Serve alongside the burger for dipping or spread a spoonful on the bun before assembling if you prefer. Refrigerate leftovers in an airtight container for up to 2 days (avocado may brown; press plastic directly on surface to slow oxidation).
