Form Patties

Divide the 1 lb ground beef into two equal portions (about 8 oz each). Gently form each portion into a patty about 3/4 to 1 inch thick and slightly wider than your buns. Make a shallow dimple in the center of each patty with your thumb to reduce doming while cooking.

Season Patties

Season both sides of each patty with kosher salt and freshly ground black pepper (about 1 tsp of each total). If using, lightly mix 1 tsp Worcestershire sauce into the meat before forming (do not overwork).

Prepare Produce

Slice the tomato into two 1/4-inch thick slices. Slice the red onion into thin rings; separate into individual rings. Wash and dry lettuce leaves and set aside.

Toast Buns

Heat a skillet or griddle over medium heat. Spread softened butter on the cut sides of the 2 burger buns. Place buns, buttered side down, on the hot skillet and toast 1–2 minutes until golden. Remove and keep warm.

Cooking

Cook Patties

Heat the skillet or griddle to medium-high and add 1 tsp neutral oil to coat. Place the patties on the hot surface. For medium doneness, cook patties 3–4 minutes on the first side without moving. Flip and cook 2–3 minutes on the second side.

Add Cheese

About 1 minute before the patties are done (when internal temp ~140–145°F for medium), place your chosen cheese slice (cheddar, swiss, pepper jack, or mozzarella) on each patty. Cover the skillet loosely with a lid or a metal bowl for 30–60 seconds to help the cheese melt.

Check Doneness

Cook to preferred doneness: 125–130°F rare, 135°F medium-rare, 145°F medium, 160°F well done. Adjust times as needed. Remove patties to a plate and let rest 2 minutes.

Assembly & Condiments

Assemble Burger

Spread 1 tbsp mayonnaise across the bottom bun. Place lettuce leaf on the mayo, then the cheesy patty. Top the patty with a tomato slice and a few onion rings. Add pickles if desired. Spread ketchup and mustard on the top bun (about 1 tbsp ketchup and 1 tsp mustard) and place top bun over the stack.

Serve

Serve immediately while hot with fries or a side of your choice.
