Form the patties
Place the ground beef in a bowl. Gently mix in 1 tsp salt, 1/2 tsp black pepper and 1/2 tsp garlic powder with your hands just until combined. Divide into 4 equal portions and shape into patties about 3/4-inch thick, making a shallow dimple in the center of each patty to prevent puffing.
Cook the patties
Heat 1 tablespoon olive oil in a large skillet or grill over medium-high heat. When hot, add patties (do not overcrowd) and cook 3–4 minutes per side for medium (adjust time for desired doneness). Avoid pressing down on patties. If using a skillet, spoon pan juices over patties once or twice while cooking. Internal temperature should be 160°F (71°C) for well-done beef.
Bruschetta Topping
Prep tomatoes and basil
Core and finely dice tomatoes into roughly 1/4-inch pieces until you have about 2 cups. Thinly slice or chiffonade basil to yield 1/2 cup. If using mozzarella balls, halve or slice them to bite-sized pieces.
Combine topping
In a medium bowl, combine diced tomatoes, minced shallot, minced garlic, sliced mozzarella, and basil. Add 2 tablespoons extra-virgin olive oil, 1 teaspoon red wine vinegar, 1/2 tsp salt, and 1/4 tsp black pepper. Toss gently to combine. Let sit 5–10 minutes to marry flavors, stirring once or twice. Taste and adjust seasoning as needed.
Balsamic Reduction & Finish
Make the balsamic reduction
Place 3/4 cup balsamic vinegar and 1 tablespoon brown sugar in a small saucepan over medium heat. Bring to a gentle simmer, then reduce heat to low and simmer until reduced by about half and syrupy, 8–12 minutes. Watch closely to prevent burning. The reduction will thicken more as it cools. Remove from heat and let cool slightly.
Assemble the Bruschetta Burgers
If using arugula, place a small handful on the bottom bun. Place a cooked beef patty on top. Spoon a generous portion (about 1/4–1/3 cup) of the tomato-mozzarella-brushchetta mixture over the patty, allowing some juices to come along. Drizzle 1–2 teaspoons of the balsamic reduction over the bruschetta topping. Top with the toasted bun. Repeat for remaining burgers.
Serve
Serve immediately while patties are warm and mozzarella is soft. Offer extra balsamic reduction on the side for drizzling. Leftover reduction keeps in the refrigerator up to 2 weeks.
