    Prepare the boar belly

    Score the skin of the wild boar belly in a crisscross pattern. Rub with olive oil, salt, black pepper, and thyme. Let it marinate for at least 1 hour.

    Prepare the vegetables

    Peel and dice the celery root into small cubes. Shred the red cabbage finely. Set aside.

    Cook the boar belly

    Preheat the oven to 300°F (150°C). Place the marinated boar belly in a roasting pan and cover it with foil. Roast for about 2 hours, then remove the foil and increase the temperature to 400°F (200°C) for an additional 30 minutes until the skin is crispy.

    Sauté the vegetables

    In a large skillet, heat 2 tbsp of olive oil over medium heat. Add the diced celery root and sauté until tender, about 10 minutes. Add the shredded red cabbage and cook for another 5 minutes. Season with salt and black pepper to taste.

    Prepare the blueberry sauce

    In a small saucepan, combine blueberries, minced garlic, and balsamic vinegar. Cook over medium heat until the blueberries burst and the mixture thickens, about 5-7 minutes. Blend if desired for a smoother sauce.

Serving

    Plate the dish

    Slice the crispy boar belly and serve it over a bed of sautéed celery root and red cabbage. Drizzle with the blueberry sauce. Enjoy!
