Prepare the Filling

In a large skillet, melt the butter over medium heat. Add the diced carrots and celery, and sauté for about 5 minutes until softened.

Make the Sauce

Sprinkle the flour over the vegetables and stir to combine. Cook for 1-2 minutes until the flour is lightly browned. Gradually add the chicken broth and heavy cream, stirring constantly until the mixture thickens. Season with salt and pepper.

Combine the Ingredients

Stir in the cooked turkey and peas into the sauce. Remove from heat and let cool slightly.

Prepare the Pastry

Preheat the oven to 400°F (200°C). Roll out the puff pastry sheets on a floured surface. Place one sheet into a greased pie dish.

Assemble the Pot Pie

Pour the turkey filling into the pastry-lined dish. Cover with the second sheet of puff pastry, sealing the edges. Cut slits in the top for steam to escape.
