Pork Loin

Pineapple Fried Rice

Method

Pork Loin Preparation

1

Marinate the Pork

In a bowl, mix together minced garlic, chopped chilies, fish sauce, brown sugar, and lime juice. Add the pork loin and marinate for at least 30 minutes.

2

Cook the Pork

Preheat your grill or oven to medium-high heat. Grill or roast the marinated pork loin for about 25-30 minutes, or until the internal temperature reaches 145°F (63°C). Allow it to rest for 10 minutes before slicing.

Pineapple Fried Rice Preparation

3

Stir-fry the Vegetables

In a large pan or wok, heat cooking oil over medium heat. Add diced carrots and peas, and stir-fry for about 3-4 minutes.

4

Add Rice and Pineapple

Add the cooked jasmine rice and diced pineapple to the pan. Stir to combine and cook for an additional 5 minutes.

5

Season the Rice

Add soy sauce and chopped green onions. Stir well and cook for another 2 minutes. Remove from heat.

Bok Choy Preparation

6

Sauté the Bok Choy

In a separate pan, heat sesame oil over medium heat. Add minced garlic and sauté for 30 seconds.

7

Cook the Bok Choy

Add chopped bok choy and stir-fry for 3-4 minutes until tender. Season with salt to taste.
