Preheat Oven

Preheat the oven to 375°F (190°C).

Make Filling

In a mixing bowl, combine the crumbled Gorgonzola cheese, chopped walnuts, finely chopped apple, and honey. Mix well to combine the ingredients evenly.

Layer Phyllo

Lay one sheet of phyllo pastry on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush with butter again. Repeat this for a total of four sheets.

Fill and Roll

Spoon the filling mixture onto one end of the layered phyllo pastry, leaving about an inch of space from the edges. Roll the pastry tightly into a log shape and place it seam-side down on a baking sheet lined with parchment paper.

Repeat Assembly

Repeat the process with the remaining phyllo sheets and filling mixture.

Butter and Top

Brush the tops of the rolled pastries with melted butter and sprinkle with additional chopped walnuts if desired.

Bake

Bake in the preheated oven for 20-25 minutes or until golden brown and crisp.

Cool and Serve

Remove from the oven and allow to cool slightly before slicing and serving.
