Method
Brisket Preparation
Prepare the Brisket
Preheat your smoker to 225°F (107°C). Rub the brisket with salt, black pepper, garlic powder, and onion powder. Smoke the brisket for around 6-8 hours until it reaches an internal temperature of 190°F (88°C).
Glaze the Brisket
In the last hour of smoking, brush the brisket with maple syrup every 20 minutes to create a glaze.
Braised Black Barley
Cook the Barley
In a pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until soft. Add black barley and vegetable broth, bring to a boil. Reduce heat, cover, and simmer for 30-40 minutes until barley is tender.
Prairie Corn
Saskatoon Berries
Prepare the Berries
In a small saucepan, combine Saskatoon berries, sugar, and lemon juice. Cook over medium heat until the berries soften and release their juices, about 5-10 minutes.
Pickled Leeks
Pickle the Leeks
In a pot, combine vinegar, water, sugar, and salt. Bring to a simmer. Add sliced leeks and simmer for 5 minutes. Remove from heat and let cool. Store in the refrigerator for at least 1 hour before serving.
