Cooking Pork Belly

    Prepare the Pork Belly

    Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, then rub it with salt and pepper. Heat olive oil in a large oven-safe skillet over medium heat and sear the pork belly skin-side down until crispy, about 5-7 minutes.

    Roast the Pork Belly

    Flip the pork belly and transfer the skillet to the oven. Roast for 2-2.5 hours, or until the meat is tender and skin is crispy. Let it rest for 15 minutes before slicing.

Making Apple Butter

    Cook Apples

    In a saucepan, combine chopped apples, brown sugar, cinnamon, and nutmeg. Cook over medium heat until apples are soft, about 20 minutes. Blend until smooth and set aside.

Preparing Apple Gastrique

    Make Gastrique

    In a saucepan, combine apple cider vinegar, sugar, and apple juice. Bring to a boil and simmer until reduced by half, about 10-15 minutes. Set aside to cool.

Preparing Garnish

    Mix Garnish

    In a bowl, combine chopped walnuts, celery, and halved grapes. Toss gently and set aside.

Making Apple Foam

    Prepare Foam

    In a bowl, combine apple juice and lecithin. Use an immersion blender to froth the mixture until foamy.
