Banana Cake

    Prepare the Cake Batter

    Preheat the oven to 350°F (175°C). In a mixing bowl, mash the ripe bananas. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then add mashed bananas and vanilla extract. In a separate bowl, mix flour, baking powder, baking soda, and salt. Gradually mix dry ingredients into wet ingredients until just combined.

    Bake the Cake

    Pour the batter into a greased cake pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely.

Dark Chocolate Mousse

    Melt the Chocolate

    In a heatproof bowl, melt dark chocolate over a double boiler. Once melted, let it cool slightly.

    Whip the Cream

    In a separate bowl, whip heavy cream and sugar until soft peaks form. Gently fold the melted chocolate into the whipped cream.

    Prepare Egg Whites

    In another bowl, beat egg whites until stiff peaks form. Gently fold the egg whites into the chocolate mixture. Chill in the refrigerator for at least 1 hour.

Banana Butter

    Make the Banana Butter

    In a mixing bowl, mash ripe bananas. Mix in softened butter, powdered sugar, and cinnamon until smooth and creamy.

Candied Peanuts

    Candy the Peanuts

    In a saucepan, combine sugar and water over medium heat. Stir until sugar dissolves. Add peanuts and cook until the mixture turns golden brown and coats the peanuts. Spread on parchment paper to cool.
