Terrine Preparation

    Prepare the Meat Mixture

    In a large skillet over medium heat, cook the bacon until crispy. Remove and chop into small pieces. In the same skillet, add chopped pork shoulder, onion, and garlic. Cook until the pork is browned and the onion is soft. Stir in thyme, black pepper, and salt.

    Combine with Gelatin

    In a small bowl, dissolve gelatin in 1 cup of water. Add the gelatin mixture to the meat mixture, stirring well.

    Form the Terrine

    Line a loaf pan with plastic wrap, leaving excess hanging over the sides. Layer the meat mixture into the pan, pressing down firmly. Fold the plastic wrap over the top and refrigerate for at least 24 hours.

    Prepare the Pickling Liquid

    In a pot, combine white vinegar, sugar, water, cinnamon stick, and cloves. Bring to a boil, stirring until the sugar dissolves.

    Pickle the Fruits

    Remove the pot from heat and add the mixed fruits. Allow to cool to room temperature, then transfer to a jar and refrigerate for at least 2 hours before serving.
