Sauté the Vegetables

In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

Add Potatoes and Liquids

Stir in the diced potatoes, fish stock, white wine, thyme, bay leaf, salt, and pepper. Bring to a simmer and cook for about 10 minutes, or until the potatoes are tender.

Cooking the Chowder

Combine Seafood

Add the shrimp, scallops, clams, crab meat, and haddock to the pot. Cook for an additional 5-7 minutes, or until the seafood is cooked through and clams have opened.

Finish with Cream

Stir in the heavy cream and adjust seasoning with salt and pepper as needed. Remove the bay leaf before serving.

Ladle the chowder into bowls and serve hot with toasted crusty bread on the side.
