Prepare the Slaw
In a large bowl, combine the shredded cabbage, grated carrots, chopped cilantro, lime juice, salt, and pepper. Toss well to combine and set aside.
Make the Chipotle-Avocado Sauce
In a blender, combine the chipotle peppers, avocado, Greek yogurt (or sour cream), and a pinch of salt. Blend until smooth and creamy. Adjust seasoning as needed.
Grill the Mahi Mahi
Preheat the grill to medium-high heat. Brush the Mahi Mahi fillets with olive oil and season with salt and pepper. Grill the fillets for about 4-5 minutes on each side, or until cooked through and flaky.
Prepare the Tortillas
While the Mahi Mahi is grilling, lightly toast the corn tortillas on the grill for about 1-2 minutes on each side until they are warm and slightly crispy.
