Prepare the meat
Place ground beef in a large bowl. Add Worcestershire sauce, minced onion, garlic powder, kosher salt, and black pepper. Gently fold ingredients together with your hands or a spatula until just combined — do not overwork the meat to keep patties tender.

Portion and shape
Divide the mixture into 4 equal portions (about 4 ounces each). Form loosely packed balls, then press into 3/4-inch thick patties slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to prevent doming while cooking.

Rest briefly
Place patties on a tray and refrigerate for 10–15 minutes to let them firm up, which helps them hold together when cooking.

Cook the patties
Heat neutral oil in a heavy skillet or preheat a grill to medium-high (about 400°F / 200°C). Add patties and cook without moving for 3–4 minutes until a brown crust forms. Flip and cook 2–3 minutes on the second side for medium (adjust time for desired doneness). During the last 1 minute of cooking, place a slice of cheddar on each patty and cover the pan or close the grill lid to melt the cheese.

In a separate skillet over medium heat, cook bacon strips until crisp, about 3–5 minutes per side depending on thickness. Transfer to paper towels to drain.

While patties cook, thinly slice the tomato and red onion. Rinse and dry lettuce leaves and set aside. Slice dill pickles if not pre-sliced.

In a small bowl, combine mayonnaise, Dijon mustard, ketchup, smoked paprika (if using), and hot sauce (if using). Taste and adjust seasoning. This yields a creamy, tangy spread for both tops and bottoms of the buns.

Spread and assemble
Spread a thin layer of the sauce on both the toasted bottom and top buns. On each bottom bun, place a leaf of lettuce, then the hot cheese-topped patty, bacon (if using), tomato slice, a couple of pickle slices, and a few rings of red onion. Finish with a small squeeze or smear of additional ketchup or sauce on the top bun, then close the burger.
