    Prepare potatoes

    Wash and scrub the potatoes well. Cut each potato into 1/3–1/2-inch thick matchsticks or fries. Place cut fries into a large bowl of cold water and soak for 30 minutes (or up to 2 hours) to remove excess starch. This helps them crisp.

    Dry and coat

    Drain the potatoes and pat them completely dry with clean kitchen towels or paper towels. Toss the dried fries in a large bowl with the cornstarch, making sure each piece has a light, even dusting. This creates an extra-crispy exterior.

    Season

    Season the coated fries with 3/4 tsp of the salt and 3/4 tsp of the black pepper; reserve 1/4 tsp salt and 1/4 tsp pepper for finishing.

    Cook (deep-fry method)

    Heat vegetable oil in a heavy-bottomed pot to 325°F (160°C). Fry the fries in small batches for 3–4 minutes until pale and soft but not browned. Remove and drain on a rack or paper towels. Increase oil temperature to 375°F (190°C). Fry the par-cooked fries in batches again for 2–3 minutes until golden brown and crisp. Drain on a rack or paper towels, and immediately season with the reserved 1/4 tsp salt and 1/4 tsp pepper.

    Cook (oven/air-fryer method)

    If using an oven: preheat to 450°F (230°C). Toss the coated fries with 2 tbs of the vegetable oil and spread in a single layer on a rimmed baking sheet lined with parchment. Roast for 20–30 minutes, turning halfway, until golden and crisp. If using an air-fryer: preheat to 400°F (200°C) and air-fry in batches for 12–18 minutes, shaking halfway, until crisp. Season with the reserved 1/4 tsp salt and 1/4 tsp pepper immediately after cooking.

Honey Drizzle & Finish

    Make honey drizzle

    In a small saucepan over low heat, combine the honey and butter. Stir gently until the butter is melted and the mixture is warm and slightly runny (do not boil). Remove from heat and whisk in the lemon juice and smoked paprika until smooth. Taste and adjust: add a pinch more salt if desired.

    Dress fries

    Place the hot fries in a large serving bowl or on a platter. Drizzle 2 tablespoons of the warm honey mixture over the fries and toss gently to coat a portion of them with a glossy finish. Add another light drizzle (about 1–2 tablespoons) just before serving so some fries remain crispy and some are sweetly glazed.

    Garnish and serve

    Sprinkle the chopped fresh parsley and the crushed red pepper flakes over the fries for color and a mild heat contrast. Serve immediately while fries are hot and the honey drizzle is warm. Offer extra honey drizzle on the side if desired.
