    Prep and dry

    Pat wings dry very well with paper towels. Removing surface moisture helps the skin crisp.

    Coat with baking powder and season

    In a large bowl, toss the wings with 2 tbs baking powder, 1.5 tsp kosher salt, and 0.75 tsp black pepper until evenly coated. Arrange wings on a rimmed baking sheet on a wire rack so air circulates around each piece. Refrigerate uncovered for 30–60 minutes if you have time (helps dry skin further).

    Cook the wings

    Preheat oven to 425°F (220°C). Brush or spray a light coat of neutral oil on wings. Bake on the rack for 20 minutes, then flip and bake another 15–22 minutes until deep golden and skin is crisp and internal temperature is 165°F (74°C). For extra crispiness, finish under the broiler 1–2 minutes per side, watching closely to avoid burning. Alternatively, grill over medium-high heat for 20–25 minutes turning frequently, or deep-fry at 375°F (190°C) for 8–10 minutes per batch.

BBQ Sauce (Sweet-Smoky)

    In a small saucepan over low heat, combine 1 cup barbecue sauce, 1 tbs apple cider vinegar and 1 tsp honey. Warm and whisk until slightly glossy and uniform, 2–3 minutes. Keep warm until ready to toss with wings.

Jalapeño Honey

    In a small saucepan over low heat, combine 1/2 cup honey and the minced jalapeños. Warm gently for 3–4 minutes to infuse heat into the honey (do not boil). Remove from heat and stir in 1 tbs fresh lime juice and 1/4 tsp salt. Taste and adjust—add more lime if too sweet. Keep warm or at room temperature for serving.

Buffalo

    In a small saucepan, melt 4 tbs unsalted butter over low heat. Add 3/4 cup hot sauce, 1 tsp white vinegar and 1/2 tsp Worcestershire sauce. Whisk until the butter is fully incorporated and the sauce is smooth. Keep warm.

Sweet Heat

    Combine 1/2 cup hot honey (or 1/2 cup honey + 1–2 tbs sriracha) with 1 tsp soy sauce and 1/2 tsp crushed red pepper flakes in a small bowl. Stir until combined and slightly warm before tossing with wings.

Lemon Pepper Garlic

    In a small skillet over low heat, melt 3 tbs unsalted butter. Add 2 minced garlic cloves and gently sauté 30–45 seconds until fragrant (do not brown). Remove from heat and stir in 1 tbs lemon zest, 1 tbs fresh lemon juice, and 1 tsp coarse lemon pepper seasoning. Add chopped parsley if using. Keep warm.

Mango Habanero

    In a blender or small food processor, combine 1 cup diced mango, 1/2 habanero (seeded for less heat), 1 tbs honey, 1 tbs lime juice and 1/4 tsp salt. Puree until smooth. Pour into a small saucepan and simmer gently for 3–4 minutes to meld flavors. Taste and adjust—add more honey for sweetness or more lime for brightness. Keep warm.

Tossing & Serving

    Divide cooked wings into 6 small batches (roughly 8 oz / 0.5 lb per batch) depending on how many sauce varieties you want to offer. For each batch, place wings in a large mixing bowl, pour ~3–4 tbs of the chosen warm sauce over them, and toss thoroughly until evenly coated. For saucier wings, add an extra tablespoon or two of sauce.

    Arrange each sauce variety on a serving platter or in separate bowls. Garnish Lemon Pepper Garlic wings with additional lemon zest and chopped parsley. Sprinkle cilantro over Mango Habanero if desired. Serve immediately with ranch or blue cheese dressing and lime wedges on the side.

    Notes: Keep leftover sauces refrigerated in airtight containers for up to 4 days. Reheat gently before tossing with freshly reheated wings. Adjust habanero and jalapeño quantities to control heat level.
