Method

Cheeses

    Prepare cheeses

    Remove all cheeses from refrigeration 30–60 minutes before serving to come to room temperature. This enhances aroma and flavor and makes soft cheeses easier to spread.

    Place the whole Brie wheel on the serving board. If desired, score the top rind lightly in a cross-hatch so guests can easily slice or spread.

    Cut the aged cheddar and Manchego into a mix of bite-size cubes and 1/4-inch slices to provide texture variety. Keep goat cheese as a whole log; optionally roll one end in cracked pepper or chopped herbs for presentation.

    Fold prosciutto slices loosely into ribbons or rosettes and place on the board to add height. Arrange salami and soppressata in overlapping fan shapes or loose rolls so they’re easy to pick up.
