Candied Pistachios
Make candied pistachios
Line a small baking sheet with parchment paper. In a small skillet over medium heat, add the pistachios, sugar, and butter. Stir constantly as sugar melts and coats the nuts, 2–3 minutes. When the sugar becomes shiny and starts to caramelize, immediately transfer pistachios to the parchment and spread into a single layer. Sprinkle a pinch of salt, let cool 5–10 minutes until set, then roughly chop or leave whole as preferred.
Balsamic Basil & Truffle Vinaigrette
Whisk vinaigrette
In a small bowl or jar combine balsamic vinegar, minced shallot, Dijon mustard, honey, lemon juice, chopped basil, salt, and pepper. Whisk or shake to combine. Slowly drizzle in the olive oil while whisking to emulsify. Stir in truffle oil at the end and taste; adjust seasoning with additional salt, pepper or a touch more honey if too sharp. Vinaigrette can be made up to 1 day ahead and refrigerated; bring to room temperature and whisk before using.
Salad Assembly
Place the mixed salad greens in a large bowl and gently toss to open the leaves.
Sprinkle the dried cranberries evenly over the greens.
Crumble the chèvre over the salad in small clusters so each bite has some cheese (about 4 oz total).
Add the crispy fried onions and the cooled candied pistachios to the salad.
Drizzle 3–4 tablespoons of the balsamic basil & truffle vinaigrette over the salad (start with 3 tbsp and add more to taste). Gently toss everything 2–3 times to coat; avoid over-tossing so chèvre remains in pieces.
Divide among 4 plates or serve family style. Finish with an extra drizzle of truffle oil (optional, about 1/4 tsp per serving) and a light sprinkle of cracked black pepper.
