Prepare and preheat
Preheat the oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan with parchment paper and lightly grease the sides.

In a medium bowl whisk together flour, baking powder and salt until evenly combined.

In a separate large bowl, beat the eggs and granulated sugar together with an electric mixer on high speed for 3–4 minutes, until pale, thick and ribboning when the beaters are lifted.

Beat in the vanilla. With the mixer on low, gently fold in the dry flour mixture in three additions, mixing just until incorporated to keep the sponge light.

Lavender Honey Syrup

While the cake bakes, combine honey, water, dried lavender and lemon zest in a small saucepan over medium heat.

Bring to a gentle simmer, stirring until the honey dissolves. Simmer for 2–3 minutes to infuse the lavender, then remove from heat and let steep for 10 minutes off heat.

Strain the syrup through a fine mesh sieve to remove lavender and zest. Reserve warm or at room temperature. This syrup will be brushed into the sponge to add moisture and aroma.
Eternal Cream (light lavender pastry cream whipped)

In a small saucepan, combine 1 cup whole milk and dried lavender. Warm over medium until just steaming, then remove from heat and let steep covered for 10 minutes to infuse. Strain, pressing on the lavender to extract flavor, and return the infused milk to the pan.

In a bowl whisk together egg yolks, granulated sugar and cornstarch until smooth and pale.

Bring the infused milk back to a gentle simmer. Slowly temper about one-third of the hot milk into the yolk mixture while whisking constantly. Then pour the yolk mixture back into the saucepan with the remaining milk, return to medium-low heat and cook, whisking constantly, until the mixture thickens and just begins to simmer — about 2 minutes. Do not boil.

Remove from heat and whisk in unsalted butter and vanilla. Transfer the pastry cream to a clean bowl, press plastic wrap directly onto the surface to prevent a skin, and chill until completely cold, at least 2 hours.

Once the pastry cream is cold, whip 1/2 cup heavy cream with 1 tablespoon confectioners' sugar to soft peaks. Fold about one-third of the whipped cream into the pastry cream to loosen it, then fold in the remaining whipped cream until airy and smooth. Taste and adjust lavender note if desired (you may add a drop more vanilla rather than more lavender). Chill briefly if needed to firm slightly.

If the cooled cake has a dome, level it with a serrated knife to create a flat top. Slice the sponge horizontally into two even layers using a long serrated knife or cake leveler.

Scatter half of the fresh blueberries over the cream and sprinkle a tablespoon of toasted sliced almonds for texture. Place the second sponge layer on top, brush again with 1–2 tablespoons of syrup.

Spread the remaining Eternal Cream on the top and smooth. Arrange remaining blueberries on top, sprinkle toasted almonds around, and garnish with edible flowers if using. Dust lightly with powdered sugar just before serving.

Chill the assembled cake for at least 30 minutes to let flavors meld and the cream set slightly. Bring to room temperature 15 minutes before serving for best texture and aroma.
