    Activate & mix

    In a small bowl, combine warm water (about 105–115°F / 40–46°C) with sugar and yeast. Let sit 5–7 minutes until foamy. In a large bowl, whisk flour and salt. Whisk together warm milk, melted butter and the egg, then pour into the flour. Add the yeast mixture and stir with a spoon until a shaggy dough forms.

    Knead

    Turn the dough out onto a lightly floured surface and knead 8–10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook on medium speed for 6–8 minutes.

    First Rise

    Lightly oil a bowl, place the dough inside, cover with plastic wrap or a damp towel and let rise in a warm place until doubled, about 60–75 minutes.

    Prepare filling

    While the dough rises, heat 1 tablespoon olive oil in a skillet over medium heat. Add minced garlic and cook 30 seconds until fragrant. Add chopped spinach and cook just until wilted, about 2 minutes. Remove from heat and let cool slightly. In a bowl combine ricotta, shredded mozzarella, grated parmesan, cooked spinach, salt and pepper. Stir until evenly distributed.

    Shape the suit base

    Once the dough has doubled, punch it down and turn it onto a lightly floured surface. Roll or press the dough out into a large rectangle roughly 12 x 16 inches (30 x 40 cm). The rectangle will become the 'body' of the suit.

    Create lapels and pockets

    Using a sharp knife or pizza wheel, cut the rectangle into components: two long strips approximately 3 x 12 inches for sleeves (you can shape later), a central torso rectangle about 8 x 12 inches, and two triangular pieces at the top for the lapels. Reserve the scraps for accents (collar points, pocket flaps).

    Assemble filling

    Spread a thin layer (about 2–3 tablespoons) of tomato sauce over the torso rectangle (leave a 1/2-inch border). Dollop the ricotta-spinach mixture in an even line down the center of the torso and spread slightly. Top with a few slices of pepperoni or ham if using and sprinkle a little extra mozzarella.

    Seal & shape

    Fold the long edge nearest you over the filling and press to seal, crimping the edges. Arrange the sleeves strips to the sides of the torso and attach by pressing the seams. Position the triangular lapel pieces at the top corners of the torso to form a jacket collar; lightly press along the seams to attach. Use remaining dough scraps to form pocket flaps, buttons, and a tie shape if desired and press them on top.

    Prepare for oven

    Preheat the oven to 400°F (200°C). Transfer the assembled suit onto a parchment-lined baking sheet. Brush the entire surface with egg wash to promote browning. Sprinkle sesame seeds along the lapel areas for contrast (use black sesame if available).

    Bake in the preheated oven for 18–25 minutes, until the crust is golden brown and the cheese is bubbly. If the edges brown too quickly, tent with foil for the last 5 minutes.

    Rest & garnish

    Remove from oven and let rest 5–7 minutes. Garnish with fresh basil leaves arranged like a pocket square and add any extra small dough buttons or tie details. Slice and serve warm.
