Citrus Base

Method

Citrus Base

  1. 1

    Juice the fruit

Roll the oranges, grapefruits, lemons, and limes on the countertop to soften. Cut and juice them to yield 1 cup orange juice, 1 cup grapefruit juice, 1/4 cup lemon juice, and 1/8 cup lime juice. Strain through a fine mesh sieve into a measuring cup to remove pulp and seeds if you prefer a smooth beverage.

  2. 2

Reserve about a tablespoon of orange juice and a small pinch of orange zest for garnish if desired.

Sweetener & Flavoring

  1. 3

    Make/measure simple syrup

If you don't have pre-made simple syrup, combine equal parts granulated sugar and water (recommended 1/2 cup sugar + 1/2 cup water) in a small saucepan. Heat gently, stirring until the sugar dissolves. Cool to room temperature before using. Measure 1/2 cup for the recipe.

  2. 4

In a small bowl or measuring cup, whisk together the measured simple syrup and 1 tablespoon honey (if using) until smooth. Stir in the grated ginger and orange zest to release aroma.

Salt & Savory Accent

  1. 5

Add 1 teaspoon flaky sea salt, 1 teaspoon freshly ground black pepper, and 1/2 teaspoon Worcestershire sauce to the syrup mixture. Whisk thoroughly until salt partially dissolves; this creates the Lowcountry savory edge that balances the citrus sweetness.

  2. 6

Taste a small spoonful of the combined citrus and sweetener mixture and adjust: add up to 1 tablespoon more simple syrup if the citrus is too tart, or a pinch more salt if it tastes flat. The target balance is bright citrus with a gentle savory backbone.

Herb & Garnish

  1. 7

Lightly bruise the basil and mint leaves: stack leaves, roll, and clap once between your palms or smash gently with the back of a spoon. This releases essential oils without making the drink bitter.

  2. 8

Add the bruised herbs into the combined citrus-syrup-salt mixture and let steep for 5 minutes at room temperature. Taste after steeping; herbs should be aromatic but not overpowering. Remove and discard any large stems.

  3. 9

If you reserved juice/zest for garnish, add a splash of reserved orange juice to the steeped mixture for a brighter top note.

Sparkle & Serve

  1. 10

Fill a large pitcher with 2 cups of ice. Pour the citrus-herb mixture over the ice, then gently add 2 cups chilled club soda or sparkling water. Stir once gently to combine — do not over-stir, to preserve effervescence.

  2. 11

Taste and adjust: if the drink needs more brightness add up to 1 tablespoon lemon or lime juice; for sweetness add up to 1 tablespoon simple syrup.

  3. 12

Pour into four chilled glasses. Garnish each with a thin orange wheel, a grapefruit twist, and one or two small sprigs of basil or mint. Optionally rim the glass with a tiny pinch of flaky sea salt for contrast.

  4. 13

Serve immediately so the drink remains fizzy. If preparing ahead, keep the citrus-herb concentrate refrigerated and add club soda and ice just before serving.
