    Chill glass and ingredients

    Place a highball or 16-oz glass in the freezer for 5–10 minutes or fill it with ice while preparing ingredients to keep the finished seltzer cold.

    If you don't have mango puree, peel and pit 1 small ripe mango and blend until smooth. Strain if you prefer a smoother texture.

Mixing the Mango-Pineapple Base

    Combine juices and sweetener

    In a mixing glass or small pitcher, add 1 cup pineapple juice, 1/2 cup mango puree, 1 tablespoon simple syrup (or agave), and 1 tablespoon fresh lime juice. Stir or whisk until fully combined and syrup is dissolved.

    Add spirit

    Measure 3 tablespoons (about 1.5 fl oz) of neutral spirit or vodka and whisk it into the fruit mixture until homogeneous.

    Taste the base: it should be bright and slightly sweet. Adjust sweetness with up to 1 additional teaspoon of simple syrup if needed. If using bitters, add 2 dashes and stir to integrate.

Assemble the Seltzer

    Prepare glass

    Discard any freezer ice from the chilled glass, then fill the glass with 1 cup crushed or cubed ice.

    Add fruit-alcohol mixture

    Pour the combined pineapple-mango-spirit mixture over the ice, leaving room at the top for the seltzer.

    Top with seltzer

    Gently top with 1 cup chilled club soda or plain seltzer. Stir once gently with a bar spoon (2–3 turns) to integrate without flattening the carbonation.

Finish & Serve

    Garnish the drink with a pineapple wedge or mango slice on the rim and, if desired, a sprig of fresh mint. Serve immediately with a straw or stirrer.

    Estimated ABV: With 1.5 fl oz of 40% ABV spirit and roughly 16 fl oz total drink volume, the finished beverage will be about 4.5–5.5% ABV (approximately 5.0% ABV).
