Base Alcohol & Water

Method

Base Alcohol & Water

  1. 1

    Measure and chill

Chill the vodka and sparkling water thoroughly in the refrigerator. Keep sparkling water cold to preserve carbonation when mixing.

  2. 2

Combine 1.6 cups chilled vodka with 6 cups chilled sparkling water in a large sanitized mixing pitcher or container. Stir gently to combine — do not vigorously agitate to preserve carbonation.

Watermelon Flavoring

  1. 3

    Prepare fresh watermelon

Remove rind and seeds from watermelon and roughly chop. Place the chopped watermelon into a blender and puree until smooth (about 30–45 seconds).

  2. 4

Strain the puree through a fine mesh sieve or cheesecloth into a bowl, pressing with a spoon to extract juice. You should yield roughly 1 cup of clear juice from about 2 cups chopped fruit.

  3. 5

If using a concentrate/syrup, add 2 tablespoons for more pronounced watermelon flavor. Add 2 teaspoons fresh lime juice to the watermelon juice to brighten the flavor.

  4. 6

Taste the watermelon mixture. If it tastes weak, you may increase concentrate or reduce sparkling water slightly when blending (see final assembly).

Sweetening & Balance

  1. 7

Add 2 tablespoons simple syrup to the watermelon-lime mixture and stir until fully combined.

  2. 8

Add 1 teaspoon citric acid solution (or 1 teaspoon lemon juice) to adjust tartness and help brightness. Stir and taste; the final drink should be balanced between light sweetness and gentle acidity.

Carbonation Stabilizers & Finishing

  1. 9

If you plan to package the drink for short-term shelf storage (several days to weeks) and want minimized fermentation or microbial growth, optionally add 0.1 tsp potassium sorbate and 0.05 tsp sodium benzoate dissolved in a tablespoon of water. These are optional and used only if making for storage; skip if consuming fresh.

  2. 10

Combine the prepared watermelon flavor mix with the vodka + sparkling water mixture. Pour the alcohol/water mix into a wide pitcher and gently fold in the watermelon mix. Do this slowly and gently to retain carbonation. Taste and adjust: add a little more simple syrup if not sweet enough (up to 1 more tablespoon), or a splash more lime if too sweet.

  3. 11

If you used ice to chill and diluted while mixing, account for dilution (the recipe accounts for approximately 4.5% ABV in a 12 oz finished can when properly measured). If the mix is too flat from ice melt, top up with additional chilled sparkling water.

  4. 12

Sanitize and chill 12-oz cans or bottles thoroughly. Using a bottling funnel or counter-pressure filler, fill each 12-oz can leaving minimal headspace (about 0.5 inch). Immediately seal/can to preserve carbonation. If you do not have canning equipment, pour into chilled bottles and cap tightly.

  5. 13

Place filled cans upright in refrigerator. Chill for at least 2 hours before serving. Consume fresh within 5–7 days if no preservatives were added; with sorbate/benzoate and proper sanitation, shelf life may extend but remains limited.
