Grouper Fillets & Seasoning

    Pat the grouper fillets dry with paper towels. This helps them sear and become flaky rather than steaming.

    Season both sides of each fillet evenly with 1 tsp kosher salt, 1 tsp freshly ground black pepper, 1 tsp lemon zest, and 1 tsp smoked paprika. Let rest at room temperature for 10 minutes while you prepare the coating and pan.

Light Coating & Searing

    In a shallow plate or bowl, whisk together 1/2 cup all-purpose flour and 2 tbs cornstarch. The cornstarch keeps the coating light and crisp.

    Dredge each seasoned fillet very lightly in the flour mixture, shaking off excess. You want a thin dusting — not a heavy batter — to keep the texture light and flaky.

    Heat a large nonstick or stainless-steel skillet over medium-high heat. Add 2 tbs olive oil and 1 tbs unsalted butter. Let the butter melt and the fat heat until shimmering but not smoking.

    Add the fillets to the pan presentation-side down (the side you will serve facing up), leaving space between them. Cook without moving for 3–4 minutes, until the underside is golden-brown and releases easily from the pan.

    Carefully flip the fillets and cook the second side for 2–3 minutes more, or until the fish registers 135–140°F (57–60°C) in the thickest part and flakes easily with a fork. Total cook time will vary by thickness (adjust +/- 1–2 minutes). Transfer cooked fillets to a warm plate and tent loosely with foil.

Quick Lemon-Butter Sauce

    In the same skillet over medium heat, add 2 tbs unsalted butter. If there are brown bits (fond) from the fish, keep them — they add flavor.

    Add 1 tsp minced garlic and sauté 20–30 seconds until fragrant (do not brown).

    Carefully add 2 tbs dry white wine (or 2 tbs low-sodium chicken broth) to deglaze the pan, scraping up any fond with a wooden spoon. Let the liquid reduce for about 30–45 seconds.

    Stir in 2 tbs fresh lemon juice and melt in the butter. Season the sauce with 1/4 tsp salt and 1/4 tsp black pepper. Taste and adjust seasoning as needed.

    Remove from heat and stir in 2 tbs chopped fresh parsley.

    Spoon the warm lemon-butter sauce over the rested grouper fillets.

To Serve (optional)

    Garnish each fillet with a lemon wedge and a small handful (about 1/2 cup) of microgreens or extra parsley for brightness and visual appeal.

    Serve immediately with a light side (simple salad, steamed vegetables, or rice) so the fish remains flaky and light.
