Broth & Base

    sauté aromatics

    In a medium pot, heat the butter or neutral oil over medium heat. Add the minced garlic and grated ginger. Sauté for 1–2 minutes until fragrant but not browned.

    build broth

    Add the chicken or vegetable broth and water to the pot. Bring to a gentle simmer over medium-high heat.

    Whisk in the soy sauce, miso paste (dissolve miso in a little warm broth first to avoid lumps), sesame oil, and red pepper flakes (if using). Reduce heat to medium-low and let the broth gently simmer while you prepare the rest, 8–10 minutes, to meld flavors. Taste and adjust salt and pepper as needed.

Noodles & Proteins

    cook eggs (optional)

    If using eggs, bring a small saucepan of water to a gentle boil. Carefully lower eggs in and boil for 7 minutes for jammy yolks, or 10–12 minutes for hard-boiled. Transfer to an ice bath for 3–5 minutes, then peel and set aside. Halve before serving.

    prepare tofu (optional)

    If using tofu, heat a small nonstick skillet with 1 tsp oil over medium-high heat. Pan-fry pressed tofu cubes 2–3 minutes per side until lightly golden. Season lightly with a pinch of salt and set aside.

    cook noodles

    Cook the ramen noodles according to package instructions in a separate pot (usually 3–4 minutes for fresh, 4–6 for dried) until just tender. Drain and briefly rinse under warm water to prevent sticking.

Vegetables & Toppings

    sauté mushrooms & carrots

    In the simmering broth or a small skillet, add the sliced mushrooms and carrot. Simmer 3–4 minutes until mushrooms soften and carrots just tenderize.

    finish greens

    Add the chopped spinach or bok choy to the broth in the last 1–2 minutes so it wilts but stays bright green.

    Slice scallion whites thinly and reserve the green tops for garnishing. Prepare cilantro/basil, nori strips, sesame seeds, and lime wedges for serving.

Assembly & Serve

    Divide the cooked noodles between two bowls (servings). Ladle the hot broth, mushrooms, and greens over the noodles.

    Top each bowl with halved eggs, pan-fried tofu (if using), carrot, sliced scallion whites, and green scallion tops. Add nori strips and a sprinkle of toasted sesame seeds if desired.

    Serve immediately with lime wedges on the side to squeeze over each bowl. Offer extra soy sauce or chili oil on the side for additional seasoning.
