Boil the Eggs

Place the large eggs in a pot and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 12-15 minutes.

Cool and Peel

Transfer the eggs to a bowl of ice water to cool for about 5-10 minutes. Once cooled, peel the eggs and slice them in half lengthwise.

Prepare the Filling

In a mixing bowl, remove the yolks from the egg halves and place them in the bowl. Add mayonnaise, Dijon mustard, harissa, salt, black pepper, paprika, chopped parsley, and chopped pickles or capers. Mash the yolks and mix until smooth and well combined.

Fill the Egg Whites

Spoon or pipe the filling back into the egg white halves.

Sprinkle paprika and chopped parsley over the filled eggs for garnish.
