Prepare the Fish

Clean and gut the fish if not already done. Rinse under cold water and pat dry with paper towels.

Season the Fish

Rub the fish with olive oil, salt, and black pepper, ensuring it's well-coated inside and out.

Prepare the Salsa Verde

In a food processor, combine parsley, capers, garlic, red wine vinegar, and anchovy fillets. Blend until smooth. Adjust seasoning with salt and pepper to taste.

Grill the Fish

Preheat the grill to medium-high heat. Place the fish on the grill and cook for about 6-8 minutes per side, or until the flesh is opaque and flakes easily with a fork.

Char the Lemon

Cut the lemon in half and place it cut-side down on the grill for about 2-3 minutes until charred.

Serve

Remove the fish from the grill and let it rest for a couple of minutes. Serve whole with salsa verde drizzled on top and charred lemon on the side.
