Prepare the Mornay Sauce

In a saucepan, melt 2 tablespoons of butter over medium heat. Stir in the flour and cook for about 1 minute, until bubbly. Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the sauce thickens. Remove from heat and stir in the nutmeg, salt, and pepper. Mix in 1 cup of Swiss cheese until melted and smooth.

Assemble the Sandwiches

Spread Dijon mustard on one side of each slice of brioche bread. On four slices, layer the ham and Swiss cheese. Top with the remaining slices of bread, mustard side down, to form sandwiches.

Cook the Sandwiches

In a large skillet, melt the remaining butter over medium heat. Place the sandwiches in the skillet and cook until golden brown on both sides, about 3-4 minutes per side.

Broil with Mornay Sauce

Preheat your broiler. Place the cooked sandwiches on a baking sheet, and generously spoon the Mornay sauce over the top. Sprinkle additional Swiss cheese on top of the sauce. Broil for 2-3 minutes, or until the cheese is bubbly and golden.

Remove from the oven and let cool slightly before slicing in half. Serve hot and enjoy!
