Preparation
Prepare the Shrimp
In a bowl, mix the flour, salt, and black pepper. In another bowl, beat the eggs. In a third bowl, combine the shredded coconut and panko breadcrumbs.
Bread the Shrimp
Dredge each shrimp in the flour mixture, dip it in the egg, then coat it with the coconut-panko mixture. Press lightly to ensure the coating sticks.
Fry the Shrimp
Heat the vegetable oil in a large skillet over medium-high heat. Once hot, add the shrimp in batches and fry until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Prepare the Garnish
In a small bowl, mix together the orange marmalade, mango salsa, and a hint of horseradish to create a dipping sauce.
Serve
Place the fried shrimp on lollipop sticks and arrange them in a martini glass. Serve with the dipping sauce on the side.
