Aged four years, this sipping beer is balanced, bold and not too sweet. Vintage Barleywine pays homage to its English roots, delivering fruity character the beer is known for.

In a large mash tun, add the pale malt, crystal malt, munich malt, and chocolate malt. Pour in 5 gallons of filtered water at a temperature of 155°F (68°C). Stir well to ensure all grains are saturated.

Mashing the Grains

Allow the mash to rest for 60 minutes at 155°F (68°C) to convert the starches to sugars.

Resting

After the rest, sparge the grains with hot water to collect around 6-7 gallons of wort.

Sparging

Bring the wort to a boil and add the East Kent Goldings hops. Boil for 60 minutes.

Boiling the Wort

With 15 minutes left in the boil, add the Fuggle hops.

Adding Flavor Hops

Once the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the English ale yeast. Seal the vessel with an airlock.

Pitching Yeast

Allow the beer to ferment for 2-3 weeks at a stable temperature of around 68°F (20°C).

Primary Fermentation

After fermentation is complete, prepare a priming solution by dissolving 3 oz of priming sugar in 2 cups of boiling water. Let it cool.

Preparing to Bottle

Mix the priming solution with the fermented beer and bottle it in sanitized bottles. If using oak chips, add them to the bottles.

Bottling the Beer

Cap the bottles and store them at room temperature for 2 weeks to carbonate.
