This bold and complex ale is brewed to a strength comparable to wine. Paying homage to its English origins, it has a rich blend of English Marris Otter malt, caramel malt, and Fuggle hops, creating a malty, fruity character.

In a large mash tun, add 9 lbs of English Marris Otter malt and 1 lb of caramel malt. Heat 3 gallons of water to 165°F (74°C) and pour over the grains. Stir well to ensure all grains are wet.

Mashing

Allow the mash to rest for 60 minutes at a temperature of 150°F (65°C). This will help convert the starches into sugars.

Resting

After the mash rest, sparge the grains with 170°F (77°C) water until you collect approximately 6 gallons of wort in your brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add 2 oz of Fuggle hops and boil for 60 minutes. This will impart bitterness and aroma to the beer.

Boiling

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch your yeast and seal the vessel with an airlock. Allow it to ferment for 2-3 weeks at a controlled temperature of around 68°F (20°C).

Fermentation

Once fermentation is complete, prepare your bottles and priming sugar. Bottle the beer, ensuring to leave some space at the top, and cap the bottles.

Bottling

Allow the bottled beer to condition in a cool, dark place for at least 2 weeks. This will help develop the flavors and carbonation.

Conditioning

After conditioning, chill the bottles and pour yourself a glass of your rich and fruity Bourbon Barleywine. Enjoy responsibly!
