Method
Herbed Yogurt Dip (Tzatziki-style)
Prepare cucumber
Grate the peeled and seeded cucumber. Place grated cucumber in a clean kitchen towel or cheesecloth and squeeze firmly to remove as much excess water as possible; this prevents a watery dip.
Combine ingredients: In a medium bowl, stir together the Greek yogurt, the drained grated cucumber, minced garlic, chopped dill, chopped mint, lemon juice, olive oil, sea salt and black pepper until fully incorporated.
Rest and adjust: Refrigerate the dip for at least 30 minutes to allow flavors to meld. Taste and adjust salt, pepper, or lemon as needed before serving.
Roasted Red Pepper & Walnut Dip (Muhammara-inspired)
Pulse in food processor: In a food processor, combine roasted red peppers, toasted walnuts, lemon juice, pomegranate molasses, smoked paprika, ground cumin, red pepper flakes (if using), olive oil and sea salt.
Blend to texture: Pulse and blend until the mixture is mostly smooth but retains some texture from the walnuts (about 30–45 seconds). Scrape down the sides and blend a few more quick pulses to ensure evenness. Taste and adjust seasoning or sweetness (add a bit more pomegranate molasses if you prefer a touch more tang/sweet).
Finish and store: Spoon into a serving bowl, drizzle a little olive oil on top and sprinkle toasted pine nuts or chopped parsley if desired. Keep chilled until serving.
Smoky Whipped White Bean Dip
Combine ingredients in blender: In a blender or food processor, add the drained and rinsed beans, tahini, crushed garlic, lemon juice, smoked paprika, olive oil, salt and black pepper.
Blend to creamy: Process until smooth, adding water, one tablespoon at a time, to reach a creamy, spreadable consistency (about 2 tablespoons total may be needed). Scrape down the sides and blend again to ensure a silky texture.
Adjust and garnish: Taste and adjust salt, lemon, or smoked paprika. Transfer to a bowl, drizzle with a little olive oil and dust a pinch of smoked paprika on top before serving.
Warm Fluffy Flatbreads
Activate yeast: In a small bowl, whisk warm water, warm milk, sugar and instant yeast. Let sit 5 minutes until slightly foamy (if not foamy, the yeast may be inactive).
Mix dough: In a large mixing bowl or the bowl of a stand mixer fitted with a dough hook, combine flour and salt. Add the yogurt and olive oil, then pour in the yeast mixture. Mix until a shaggy dough forms; knead by hand on a lightly floured surface or with the mixer for 6–8 minutes until smooth and elastic.
Divide and rest: Punch down the dough gently and turn onto a lightly floured surface. Divide into 8 equal pieces (for medium-size flatbreads). Roll each piece into a ball, cover with a towel and rest 15 minutes to relax the gluten.
Shape and cook: Preheat a heavy skillet or cast-iron pan over medium-high heat. Lightly flour or dust with semolina. Roll each ball into a 6–8 inch round, about 1/8–1/4 inch thick. Cook each flatbread 1–2 minutes per side until puffed and golden brown spots appear; press gently with a spatula for even contact. Brush cooked flatbreads with a little olive oil and keep wrapped in a clean towel to stay warm while you cook the rest.
Finishing & Serving
Arrange dips and flatbreads: Spoon each dip into separate shallow bowls. Drizzle each with a little extra-virgin olive oil. Garnish the roasted red pepper dip with toasted pine nuts and chopped parsley, the yogurt dip with a sprinkle of dill and a lemon wedge, and the white bean dip with a dusting of smoked paprika.
Storage: Refrigerate leftover dips in airtight containers for up to 4 days. Flatbreads keep in an airtight container at room temperature for 2 days or frozen for up to 1 month; reheat wrapped in foil in a warm oven or briefly in a skillet.
