Porridge Base
Combine liquids and oats
In a small saucepan (about 1–1.5 qt), add 1 cup rolled oats, 1 cup whole milk, 1 cup water and 1 tsp fine salt. Stir briefly to combine.
Heat and simmer
Place saucepan over medium-high heat and bring to a gentle boil while stirring occasionally to prevent sticking. Once it reaches a simmer, reduce heat to low.
Cook until thick
Simmer gently, stirring every 30 seconds, for 6–8 minutes until oats are tender and porridge has thickened. If it becomes too thick, add a splash (about 1–2 tbs) of water or milk and stir to loosen.
Sweetener & Flavor
Finish flavors
When oats are tender and mostly thickened (after about 6–8 minutes), stir in 1 tbsp brown sugar or maple syrup, 1 tsp vanilla extract and 1 tsp ground cinnamon. Taste and adjust sweetener or cinnamon as desired.
Remove from heat and let sit for 1 minute to thicken slightly before serving.

Assemble and serve
Spoon porridge into a small bowl. Top with sliced banana, 1/4 cup berries and 1 tbsp chopped nuts. If you prefer a looser texture, drizzle 1 tbsp milk or cream over the top. Finish with a light pinch (about 1/4 tsp) of sea salt flakes if using to enhance sweetness.
Serve immediately while warm.
