Prepare meat and seasonings
Place the pork sausage meat (or ground pork) in a large bowl. Sprinkle the salt, black pepper, chopped fresh sage, thyme, minced garlic, and fennel seeds (if using) over the meat. Add red pepper flakes and brown sugar or maple syrup if you want a spicier or slightly sweet profile.
Incorporate cold water
Add the cold water over the seasoned meat. Using your hands or a sturdy spoon, mix in one direction for about 30–60 seconds until the mixture becomes sticky and slightly tacky. This helps the proteins bind and gives the sausage a good texture.
Form into sausages
Divide the mixture into 4 equal portions (about 4 oz/113 g each). Shape each portion into a sausage link or patty, squeezing and rolling to remove large air pockets. If you prefer stuffed sausages and have casings, you can fill natural or collagen casings at this stage — otherwise form patties or links by hand.
Optional chill
For best texture and easier handling, transfer the formed sausages to a plate, cover, and chill in the refrigerator for 30 minutes to 1 hour. This firms the fat and makes them hold shape during cooking.

Pan-fry (recommended)
Heat a large skillet over medium heat and add 1 tablespoon oil. When shimmering, add the sausages (leave space between each). Cook without moving for 3–4 minutes to develop a brown crust, then turn and continue cooking, turning every 2–3 minutes to brown all sides, about 10–12 minutes total, until internal temperature reaches 160°F (71°C) for pork. If using thicker sausages or patties, cover the pan for the last few minutes to ensure they cook through.
Finish with butter (optional)
If desired, add 1 tablespoon butter to the hot pan in the last minute and spoon the melted butter over the sausages for gloss and flavor.
Oven-bake (alternative method)
Preheat oven to 375°F (190°C). Place sausages on a rimmed baking sheet or in an oven-proof skillet. Bake for 20–25 minutes, turning once halfway through, until internal temperature is 160°F (71°C) and the outsides are browned. For crisper skin, broil 1–2 minutes at the end, watching carefully.
Storage and reheating
Refrigerate cooked sausages in an airtight container for up to 4 days. Reheat in a skillet over medium heat or in a 350°F (175°C) oven until warmed through. Frozen raw formed sausages can be stored up to 3 months; thaw overnight before cooking.
