Chill and prepare

Keep the sparkling wine and sparkling water well chilled (ideally refrigerated for at least 1–2 hours). If you prefer a very cold drink, place the serving glass in the freezer for 5–10 minutes before preparing.

If using, add 2 ice cubes to the chilled glass. Note: adding ice will slightly dilute and cool the drink; omit ice if you want the purest fizz and maximum flavor.

Pour 4 oz chilled sparkling wine or champagne into the glass. Pour gently down the side to preserve bubbles.

Add 0.5 tsp fresh lemon juice to the glass. This brightens the flavor without overpowering the bubbles.

Top with 1 oz chilled dry sparkling water (or club soda) to add a crisp lift and lengthen the drink. Pour slowly to avoid excessive foaming.

If you want a touch of sweetness, stir in 0.25 tsp simple syrup and gently stir once to combine. Taste and adjust: add another 0.25 tsp if you prefer sweeter.

Garnish with a lemon twist or a thin lemon wheel placed on the rim or floated on top. Serve immediately while bubbly.
