Fry eggs (sunny-side or as preferred)
Heat 1 tbs butter in a nonstick skillet over medium. Crack eggs into the pan (work in batches if necessary). Season with 1/2 tsp salt and 1/4 tsp black pepper. For sunny-side, cook 2–3 minutes until whites are set and yolks still runny; for over-easy, flip carefully and cook another 20–30 seconds. Cover with a lid for 30–45 seconds if you want slightly set yolks.
Assemble & Finish
Choose your base: toasted bun halves, warmed flatbread, or granary bread. Spread about 1 tsp ketchup and 1 tsp brown sauce (if using) on the bottom piece.
Layer in this order for each sandwich: bottom bread -> fresh spinach leaves (about 1/4 cup) -> protein: sausage (1 whole) OR 2 bacon rashers OR 1 seared mushroom cap -> fried egg with melted cheese on top. If making flatbread, fold or roll gently; for buns, place top half on and press lightly.
Serve immediately while hot with extra condiments on the side.
