Heat 2 tablespoons olive oil in a large skillet over medium heat. Add the sliced leeks and a pinch of salt. Sauté, stirring occasionally, until the leeks are softened and starting to caramelize, about 6–8 minutes.
Add the minced garlic and cook for 30–45 seconds until fragrant. Add the spinach in batches, letting each batch wilt slightly before adding the next. Cook until all the spinach is wilted and tender, about 3–4 minutes total. Season with 1 teaspoon salt, 1 teaspoon black pepper, and the crushed red pepper flakes if using.
Beans & sauce
Reduce heat to low. Stir the drained and rinsed white beans into the wilted spinach and leeks. Gently mash about half the beans with the back of a spoon to create a slightly creamy texture while leaving some whole beans for bite.
Stir in 1 tablespoon lemon juice, 1 tablespoon broth, and the optional 1 tablespoon crumbled feta or grated pecorino. Taste and adjust seasoning, adding more salt, pepper, or lemon as desired. Cook for 1–2 minutes to warm through and let flavors meld.
