Prepare the Croutons

Preheat your oven to 375°F (190°C). Cut the brioche bread into small cubes and toss them with olive oil and a pinch of salt. Spread them out on a baking sheet and bake for about 10-12 minutes or until golden brown.

Grill the Romaine

Preheat your grill to medium-high heat. Cut the baby romaine heads in half lengthwise and brush the cut sides with olive oil. Place them on the grill cut-side down and grill for about 2-3 minutes until they have nice grill marks. Remove from the grill.

Prepare the Chicken (Optional)

If adding chicken, season the chicken breast with salt and pepper. Grill it for about 6-7 minutes on each side or until fully cooked. Slice it thinly.

Assemble the Salad

On a plate, place the grilled romaine halves. Top with shaved parmesan, heirloom cherry tomatoes, and croutons. Drizzle with Roman Caesar dressing and sprinkle with cracked black pepper.
