Prepare the Cabbage
Remove the outer leaves of the cabbage and slice it into wedges. Drizzle with olive oil, salt, and pepper.
Cook the Ham Hock
In a large pot, add the smoked ham hock and water. Bring to a boil, then reduce to a simmer. Cook for about 1 hour until the meat is tender.
Char the Cabbage
Preheat a grill or a grill pan over high heat. Place the cabbage wedges on the grill and char for about 5-7 minutes on each side until they develop a nice smoky flavor and grill marks.
Combine Ingredients
Once the ham hock is cooked, remove it from the pot and shred the meat. In a serving bowl, mix the charred cabbage, shredded ham hock, and Virginia peanuts. Drizzle some of the jus lie (broth from the pot) over the top.
Garnish and Serve
Finish with fresh dill on top and serve warm.
