Make honey syrup (if you don't have it)

Combine equal parts local honey and hot water (e.g., 1/4 cup honey + 1/4 cup hot water). Stir until fully combined and let cool. Store refrigerated in a sealed container.

Chill an old fashioned glass by filling with ice or placing in freezer for a few minutes.

Build the cocktail

In a mixing glass or a cocktail shaker without ice, combine 2 oz Oliver Honey Mead and 1 oz Four Roses Bourbon.

Add 0.5 oz local honey syrup to the mixing glass.

Add 3 dashes of orange bitters.

Fill the mixing glass with large cubed ice and stir gently for 20–30 seconds until well chilled and slightly diluted (about 15–20 full strokes). Stirring integrates the mead and bourbon while achieving proper dilution.

Discard ice from the chilled old fashioned glass and place one large ice cube (or fresh ice) in the glass.

Strain the mixed drink into the old fashioned glass over the large ice cube.

Hold an orange twist over the drink and express the oils by pinching and rubbing the twist skin side down across the rim, then run the twist around the rim and drop it into the glass.

Optional: add a maraschino cherry and/or a small sprig of thyme for aroma.

Serve immediately. Sip slowly to enjoy the interplay of honeyed mead, bourbon warmth, and citrus bitters.
