Blackberry Honey Syrup
Cook syrup
Combine 1 cup blackberries, 1/2 cup honey, and 1/2 cup water in a small saucepan over medium heat.
Bring to a gentle simmer, mashing berries with the back of a spoon or a potato masher to release juices. Simmer 5–7 minutes until mixture is syrupy and berries are softened.
Remove from heat and stir in 1 tsp fresh lemon juice to brighten flavor. Let cool slightly (about 10 minutes).
Strain the mixture through a fine-mesh sieve into a jar or container, pressing on solids to extract as much syrup as possible. Discard solids. Cool completely, then refrigerate. Syrup will keep 7–10 days refrigerated.
Cocktail Assembly
In a rocks glass or copper mug, add 6 fresh blackberries and 6 mint leaves.
Muddle the blackberries, mint, syrup, and lemon juice together until the berries are broken down and the mint is aromatic, about 8–12 firm presses. Avoid pulverizing the mint into tiny bits; press to release oils.
Fill the glass about three-quarters with crushed ice (roughly 1 cup).
Pour 2 oz Four Roses bourbon over the ice.
Using a long spoon or small barspoon, stir briefly (4–6 gentle stirs) to integrate flavors and chill the drink.
Top with additional crushed ice to mound above the rim if desired (smash style).
Garnish with a sprig of mint and a halved blackberry on the rim. Optionally slap the mint between your palms before garnishing to release aroma.
Serve with a short straw and enjoy.
