Combine

Measure 1/2 cup local honey and 1/2 cup warm water into a small heatproof container or jar.

Dissolve

Stir vigorously until the honey is fully dissolved into the water and the mixture is uniform. Warm water (not boiling) helps dissolve more quickly.

Cool and store

Let syrup cool to room temperature, then transfer to a sealed bottle or jar and refrigerate. Syrup will keep 2–3 weeks refrigerated.

Chill glass

If desired, place a coupe or martini glass in the freezer for a few minutes or fill with ice water while you mix the drink to chill it.

Measure

Measure 2 oz Hendrick's Gin, 3/4 oz fresh lemon juice (about half a lemon), and 3/4 oz honey syrup.

Shake

Fill a cocktail shaker with ice (about 1 cup). Add the gin, fresh lemon juice, and honey syrup. Secure the lid and shake vigorously for 12–15 seconds until the shaker is very cold and slightly frosted. Vigorous shaking helps incorporate the honey syrup and creates a silky texture.

Strain

Empty the chilling glass if used. Double-strain the cocktail into the chilled coupe or martini glass using a Hawthorne strainer and a fine mesh strainer to catch any ice shards and pulp.

Garnish

Express a lemon twist over the drink to release oils, rub the rim lightly with the twist if desired, then drop it into the glass or perch a thin lemon wheel on the rim.

Serve

Serve immediately. Enjoy the balance of floral Hendrick's botanicals, bright lemon, and smooth honey sweetness.
