Check bottle and temperature
Remove 20 Acre Farm by Bogle from cellar or fridge. This California red (typically a blend) is best served slightly below room temperature: 60–65°F (15–18°C). Use a wine thermometer if desired to confirm temperature.
Open bottle
Cut capsule, center and remove cork with a waiter’s corkscrew or corkscrew of choice. Wipe the mouth of the bottle with a clean cloth to remove any sediment or cork bits.
Decant (optional)
If the bottle is younger (under 5 years) or you prefer a little aeration, pour the wine slowly into a decanter and let it sit for 15–30 minutes. For older bottles with sediment, decant carefully and stop when you see sediment approaching the neck.
Pour
Hold the glass by the stem and pour 5–6 oz (one standard glass) into a red wine glass. Fill to about one-third full to allow the wine to breathe and to give space for swirling and nosing.

Assemble cheeses
Remove cheeses from the refrigerator 15–20 minutes before serving to bring them closer to room temperature. Slice the aged cheddar and manchego into 1/4" pieces or small wedges for easy tasting.
Arrange charcuterie
Fold the salami slices and place them on the board next to the cheeses. Scatter Marcona almonds in a small pile and place the seeded crackers within easy reach.
Add accent
Place a small spoonful (about 1 tsp) of fig jam on the board or in a small dish. This sweet accent pairs nicely with the fruit and subtle oak often found in California red blends.
Serve
Bring the decanted wine (or freshly opened bottle) to the table along with the pairing plate. Invite guests to taste the wine first, then sample with the cheese and salami to discover complementary flavors.
Cleanup
Recork the bottle if there is leftover wine, or use a vacuum stopper. Store opened bottle upright in the refrigerator to slow oxidation. Clean decanter and glasses with warm water and mild detergent; avoid abrasive scrubbing on delicate leaded glass.
