Chicken and Corn Bread
Method
Preparation and Cooking
Sous Vide Chicken
Prepare the chicken by seasoning it with salt, black pepper, paprika, garlic powder, and onion powder. Place the chicken halves in a sous vide bag and seal it. Preheat the sous vide water bath to 150°F (65°C). Cook the chicken in the water bath for 2 hours.
Corn Bread
In a mixing bowl, combine cornmeal, flour, baking powder, and a pinch of salt. In another bowl, whisk together milk, egg, honey, and melted butter. Gradually mix the wet ingredients into the dry ingredients until just combined. Pour the batter into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes or until golden brown.
Frying the Chicken
Once the chicken is cooked sous vide, remove it from the bag and pat it dry with paper towels. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken halves for about 3-4 minutes on each side until golden brown and crispy.
Serving
Serve the fried chicken hot alongside slices of cornbread.
