Scrambled (soft)

Prepare eggs

Crack the desired number of whole eggs into a bowl (for egg whites only use liquid egg whites measured). Whisk gently with a fork or whisk until just combined. Season with about 1/4 tsp salt and a pinch of black pepper per 2 eggs.

Heat pan

Place a nonstick skillet over medium-low heat. Add 1/2 tsp butter and 1/2 tsp oil and let butter melt until foamy but not browned.

Pour eggs into the pan. Let them sit undisturbed for 10–15 seconds, then using a silicone spatula, gently push the eggs from the edges toward the center in slow folding motions. Continue folding occasionally until curds form and eggs are still soft and slightly glossy, about 1–2 minutes total depending on quantity.

Remove from heat while slightly underdone (carryover will finish cooking). Stir in optional 1 tbsp grated cheese if using. Taste and adjust salt and pepper. Garnish with chopped herbs and serve immediately.

Over Easy / Over Medium / Over Hard

Heat and oil

Heat a nonstick or well-seasoned skillet over medium heat. Add 1/2 tsp butter and/or 1/2 tsp oil and let it shimmer.

Crack eggs

Crack whole eggs into a small bowl or cup one at a time, then gently slide into the skillet, spacing them so they don't touch.

Cook undisturbed until whites are set around the edges and the bottoms are lightly golden, about 2–3 minutes. For over-easy: gently flip each egg with a spatula and cook 10–20 seconds more (yolks runny). For over-medium: flip and cook 30–45 seconds (yolks partially set). For over-hard: flip and cook 1–2 minutes until yolks fully set.

Season with salt and pepper to taste and garnish if desired. Serve immediately.

Poached

Prepare water

Bring a medium saucepan of water to a gentle simmer (not a rolling boil). Add a splash (1 tsp) of white vinegar if desired to help egg whites coagulate. Reduce heat so only a few small bubbles rise.

Create whirlpool (optional)

Use a spoon to stir the water to create a gentle whirlpool; this helps the white wrap around the yolk for a neat shape.

Crack one egg into a small cup and gently slide it into the simmering water. Poach 3 minutes for a runny yolk, 3.5–4 minutes for slightly firmer. Do not overcrowd — poach up to 2 eggs at once in a standard pan.

Use a slotted spoon to lift the poached egg, briefly drain, and place on a paper towel to remove excess water. Season with salt and pepper and serve.

Egg Whites Only (pan-cooked)

Measure and season

Measure liquid egg whites or separate whites from whole eggs. Add a pinch of salt and pepper and whisk lightly.

Cook

Heat a nonstick skillet over medium-low heat and add 1/2 tsp butter or oil. Pour the egg whites into the pan and let them set for 20–30 seconds, then gently stir or fold until cooked through and opaque, about 1–2 minutes. Alternatively cook as an omelet/patty by letting set without stirring, then flip to finish.

Adjust seasoning, add optional herbs or cheese, and serve immediately.
