Omelet
Sauté vegetables
Heat 1 tsp oil in a 8–10 inch nonstick skillet over medium heat. Add the diced onion and red pepper and a pinch of salt. Sauté, stirring occasionally, until softened and slightly golden, about 4–5 minutes. Remove from pan to a small bowl and set aside.
Cook omelet
Wipe skillet clean and add 1 tbsp butter over medium-low heat. Pour the beaten eggs into the skillet, swirling to make an even layer. As edges set, gently lift edges with a spatula and tilt skillet to let uncooked egg run underneath. When eggs are mostly set but slightly moist on top (about 2–3 minutes), sprinkle the sautéed onion/pepper, chopped cilantro, diced tomato, and shredded pepper jack evenly over half of the omelet.
Fold and finish
Carefully fold the empty half of the omelet over the filled half using a spatula. Let cook another 30–60 seconds to melt cheese through. Slide the omelet onto a warm plate.
Chipotle sauce & toppings
Make chipotle sauce
In a small bowl, mince or finely chop the chipotle pepper (remove seeds for milder heat). Stir together the chopped chipotle, mayonnaise, sour cream, lime juice, and minced garlic until smooth. Taste and adjust salt or more lime if desired. If sauce is too thick, thin with 1–2 tsp water.
Assemble toppings
Spoon 2–3 tbsp of the chipotle sauce over the top of the folded omelet. Sprinkle the crumbled feta and tortilla strips over the sauce. Finish with a tablespoon of extra chopped cilantro for garnish.
Sides & service
Serve the Santa Fe Omelet immediately with the warm tortilla on the side and the chosen breakfast side. Offer extra chipotle sauce on the side if desired.
