Marinate the steak

Pat the flat iron steak dry with paper towels. In a small bowl combine 1 tbsp olive oil, 1 tbsp Worcestershire sauce, 1 tsp minced garlic, 1 tsp kosher salt and 1 tsp freshly ground black pepper. Rub the marinade all over the steak, cover and let sit at room temperature for 20 minutes (or refrigerate for up to 2 hours).

Grill or pan-sear the steak

Heat a grill or heavy skillet (cast iron recommended) over medium-high heat until very hot. If using a skillet, add a light brush of oil to the pan. Sear the steak 3-4 minutes per side for medium-rare (internal temp 130-135°F / 54-57°C), or longer to desired doneness. Remove steak to a cutting board and let rest 8-10 minutes to allow juices to redistribute.

Slice the steak

Against the grain, thinly slice the rested steak into strips roughly 1/4" wide. Keep warm while you finish the vegetables and toast the rolls.

Sauté onions and peppers

Meanwhile, heat 1 tbsp olive oil and 1 tbsp unsalted butter in a large skillet over medium heat. Add the thinly sliced onion and bell peppers. Sauté, stirring occasionally, until softened and beginning to caramelize, about 8-10 minutes. Season with salt and pepper to taste. If vegetables brown too quickly, reduce heat to medium-low and continue cooking until tender.

Prepare and toast rolls

Split the hoagie rolls lengthwise. Spread about 1/2 tbsp butter inside each roll. In a clean skillet or under a broiler, toast the cut sides until golden and lightly crisp, about 1-2 minutes under broiler or 1-2 minutes in skillet over medium heat. Watch carefully to avoid burning.

Assemble with cheese

Return the sliced steak to the vegetable skillet and toss briefly to combine and reheat (about 1 minute). Divide the steak and vegetable mixture evenly among the toasted rolls. Top each portion with about 1.5 oz (approx. 1/3 cup shredded or 1-2 slices) Monterey Jack cheese. If you prefer the cheese melted through, place filled sandwiches under a broiler for 30-60 seconds or cover skillet with lid for 1 minute until cheese is melted.

Garnish and serve

If desired, sprinkle chopped fresh parsley over the sandwiches. Serve each cheese steak with a side of pickle spears and chips or fries. Enjoy immediately while hot.
