Method
Pan-fried bacon
Bring bacon to room temperature
Remove the 3 thick-cut bacon slices from the refrigerator and lay them on a plate. Let them sit at room temperature for 10–15 minutes to reduce shrinkage and help cook more evenly.
Cook slowly and render fat
Cook over medium-low to medium heat. After 4–6 minutes, using tongs, lift an edge to check color and underside crispness. Flip each slice and continue cooking. Total cook time will be about 8–12 minutes depending on thickness and desired doneness (8–9 minutes for tender with some chew, 11–12 minutes for well-crisped).
Adjust heat as needed
If the bacon is browning too quickly or the pan is smoking, reduce heat slightly. If it isn't browning after several minutes, increase heat slightly. Aim for steady gentle sizzling rather than aggressive spitting.
Final crisp and season
When bacon reaches your preferred crispness, transfer slices to a plate lined with paper towel to drain excess fat. If desired, finish with a light pinch of freshly ground black pepper while still hot.
Serve
Serve immediately while warm as a side. Optionally reserve rendered bacon fat (strain and store) for cooking later.
