Preparation
Prepare the Rub
In a bowl, mix together paprika, brown sugar, black pepper, garlic powder, onion powder, cayenne pepper, and salt to create a dry rub.
Season the Meat
Generously apply the dry rub to the brisket, pork ribs, and sausage. Make sure to cover all sides and let it sit for at least 1 hour, preferably overnight in the refrigerator.
Smoking
Smoke the Meat
Place the seasoned brisket on the smoker and smoke for about 12-14 hours, adding the pork ribs and sausage during the last 4-5 hours of cooking. Maintain a consistent temperature and replenish the wood chips as needed.
Rest the Meat
Once the meat reaches the desired internal temperature (195°F for brisket, 165°F for ribs), remove it from the smoker and let it rest for at least 30 minutes before slicing and serving.
